Bean soup

Ingredients (for 6 people):

Beans ½ kilo, 2 large tomatoes pureed, 2 carrots chopped in in pieces,1 arid onion, 2-3 arid red peppers, olive oil 1 cup ,red swet paper ½ .tablespoon parsley  ½ cup or dried mint , 1 tablespoon salt  ½  chopped celery optionally water

Preparation :

Since last night put the beans to soak in water.In the morning , change the water and you are putting them to take a  boil.Drain the water and put to the pot fresh water , to overlap by five points by beans.Put back the pan in the heat and add the beans with water, carrot onion and red peppers.Simmer the beans with covered pan for 1 ½ hours.Check frequently and perhaps you will need to add a little more water , which should be warm.Towards the end , add  the parsley or mint , tomatoes and salt.Remove the beans in a dish the onions and the cooked red peppers.Mash the onion , remove the peels from the peppers mash the as well.Discard the pureed ingredients into the pot and start stirring .In a small flyring pan a burn little oil on this and stir the red pepper.Immediately pour the beans and remove from fire. 

If you like a little hot , pour in the pot -two hot peppers (tsouskes) or anyone can put it on his plate.


Meatballs with onions and red peppers

Ingredients (for 4-5 people) :

For meatball: Pound ground beef  ½ kilo , Bread crumbs 2 slices, 1 egg, 1-2 cloves of garlic, oregano, salt, black pepper

For the remaining food : Arid onions 1½ kilo , 1 kilo of red peppers sliced , 1 cup of oil, 2 chopped tomatoes , 2 bay leaves  , red pepper , 1cup of water


Clean the onions into thin julienne slices.Cut the red peppers into rings .In a large skillet roast the onions with half the olive oil , red pepper , tomatoes  , peppers into slices and let it simmer.Add a cup of water.Boil a little longer and remove from fire.In a deep dish put the mince , soaked and squeezed bread crumbs , egg chopped garlic  , oregano , salt , pepper.Knead the materials all togehther so the material can be equable,Put them the parboiled peppers with onions in a pan , shape the meatball in shape and size of your choice and place them on the onions.Add salt , pepper , remaining oil , the two bay leaves and bake it at 200ο C for 2 hours.


Wipes (veal with aubergines )

Ingredients (4 people): 1 kg beef into portions, 4-5 long aubergines, 4 chopped ripe tomatoes, 1chopped medium onion , 1 clove garlic, chopped parsley, a little olive oil, 1 cup of water 1 cup dry red wine , 2 tablespoons crumbled feta cheese , salt and pepper  

Preperation: Wash the meat and saute in a pan with a little olive oil.Then , add the onion , garlic , tomatotes , wine ,water , salt and pepper.Leave the meat on low heat to boil and get soften.In the meantime  , cut the eggplants lengthwise into slices about 1.5 cm , fry lightly and let the paper towel to excrate the oil.Place 2 eggplants slices crosswise in the middle of the cross put out a piece of meat.Cover the meat with the four edges of the eggplant slices and nail over a toothpick ,thus forming the wipes.Place the wipes in a pan and put the sause from the pot.Cook food in the oven at 200C for 25-30minutes.Before serving , sprinkle the dish with parsley and grated cheese.


Prespa Giants (oven)

Ingredients: Half a kilo of beans , 2 large chopped arid onions, 2 large chopped carrots , 2 red Florina peppers , half a cup of tomato paste ,a bunch of parsley with a little celery toghether  ,rather little garlic , a tabblespoon of oregano , a tablespoon dry mint or "chloro" if we have , a tablespoon red pepper or chilli flakes , a cup of oil  

Preparation: Wash the beans.Put in the pot (no kettle) with plenty of water and let it to take a boil, turn the off the ring  of the kitchen and leave an hour to soak well (in this way you dont need to soak them from the night).

After inflate our beans wash them well and put them to boil along with the chopped carrots.In our pan now put the chopped onions and the chopped peppers ,add oil and saute until sightly wilted.Add the tomato paste the parsley and all of our herbs.After the beans have boiled pour into the pan with the broth and bake in the oven for 45 minutes.

They must not lose their juice  when necessary add a little boiling water.


Strapatsada Florina 

Ingredients : 2 red papers cuted into slices , 5 eggs  , 2 ripe tomatoes , milk , hard cheese feta , 2 cloves of chopped garlic, parsley , salt and pepper, 2 tablespoon of oil for frying. 

Preparation: In a large pan with 2 tabblespoons of olive oil saute the peppers and grarlic.Add the peeled tomatoes that used in the mixer.Allow the mixture to boil to evaporate almost all liquids.Add parsley a pinch of salt and the clumbled feta cheese.Beat eggs with a tablespoon of milk and pour the mixture.You are turning off the heat and stir lightly so the egg can go everywhere and coagulate well.Put the strapatsada on the platter and sprinkle with pepper.


Pie with leeks and peppers of Florina 

Ingredients (For 8 people):

For the dough:1/2 kilo of flour , 1 spoonful of salt , 2 spoonfuls of vinegear , 1/4 cup of oil , 1 cup warm water , 3/4 cup of soft margarine 

For the filling: 800 gr leeks into thin slices , 800 gr , Florina peppers , 1 tomato peeled into pieces , 1/4 cup olive oil , 1/4 chopped parsley , salt and freshy ground pepper , 1/2 teaspon chili flakes. 

Preparations : Prepare the dough.In the mixer bowl , mix the flour with salt , pour the vinegar , oil and water and knead withe kneading hook for 7 minutes , until it form a soft dough that does not stick to fingers.Divive it into 12 balls and then put them in a pan.Cover it with a damp towel and let stand there for 1 hour.Meanwhile , put the leeks got cooking in enough water until half-soften and drain off it very well.Bake in the grill the peppers ,peel them and cut them into pieces.Put the oil in a sause pan to heat up , pour the leeks and peppers and stir up the fire 7-8 miniutes so it can be sauted,Add tomatoes , salt pepper and chili flakes and let the mixture 2 minutes in a over high heat until the liquid was evaporated.Pour and stir in the parsley Open the balls of dough flake 20 cm.Brush with a little margarine and stack it three to three toghether.Leave pies stacked 30 minutes in the refrigator and open the four sheets ,with a diameter slightly larger than the diameter of a pan 40 cm.Grease the pan and place two leaves .Spread on the filling and cover it with the remaining two leaves.Grease well the surface of the pie and carve into pieces.Bake in a 180 degree Celsius , about 1 hour to browned the top -bottom.Serve warm or cold  , is the same delicious.
